Mango kulfi is a delicious and creamy frozen dessert, perfect for summer. Here's a simple recipe to prepare mango kulfi at home:
### Ingredients:
- 2 ripe mangoes (about 2 cups of mango pulp)
- 2 cups whole milk
- 1 cup heavy cream
- 1/2 cup condensed milk
- 1/2 cup sugar (adjust to taste)
- 1/4 teaspoon cardamom powder
- 10-12 pistachios, chopped (optional)
- 10-12 almonds, chopped (optional)
- Kulfi molds or small paper cups and popsicle sticks
### Instructions:
1. **Prepare the Mango Pulp:**
- Peel the mangoes and cut the flesh away from the pit.
- Puree the mango flesh in a blender until smooth. Set aside.
2. **Prepare the Milk Mixture:**
- In a heavy-bottomed saucepan, bring the whole milk to a boil over medium heat.
- Reduce the heat and let it simmer, stirring occasionally, until the milk reduces to about half its original volume. This should take about 20-25 minutes.
- Add the condensed milk, heavy cream, and sugar to the reduced milk. Stir well and cook for another 5-10 minutes until the mixture thickens slightly.
- Add the cardamom powder and mix well.
- Remove from heat and let it cool to room temperature.
3. **Combine Mango Pulp with Milk Mixture:**
- Once the milk mixture has cooled, add the mango pulp and mix well until everything is thoroughly combined.
4. **Add Nuts (Optional):**
- If using, add the chopped pistachios and almonds to the mixture and stir.
5. **Pour into Molds:**
- Pour the mixture into kulfi molds. If you don't have molds, you can use small paper cups and insert popsicle sticks into the center.
- Cover the molds or cups with aluminum foil and make a small slit to insert the popsicle sticks if using paper cups.
6. **Freeze:**
- Place the molds in the freezer for at least 6-8 hours or until the kulfi is completely frozen.
7. **Unmold and Serve:**
- To unmold the kulfi, dip the molds briefly in warm water to loosen them. Gently pull out the kulfi.
- Serve immediately and enjoy your homemade mango kulfi!
### Tips:
- **Sweetness:** Adjust the amount of sugar based on the sweetness of the mangoes and your personal preference.
- **Creaminess:** For an extra creamy kulfi, you can increase the amount of heavy cream.
- **Texture:** You can blend the nuts into a coarse powder if you prefer a smoother texture.
